Shan Lin Xi is a peak near Lugu in the county of Nantou, Taiwan.  The higher elevation habitat (4800 ft) is characterized by extreme climate variations, perennial fog and mineral-rich soils that result in a tea with unique and often surprising flavor profiles.

A classic oblong ball-shaped oolong, the leaf pick is a bud and three leaves with stem.  The leaves are are a rich, variegated green when dry, with light floral and citrus aroma. The steeped leaf produces a nose of star magnolia, citrus and tellicherry pepper.  The liquor is a pale green gold with a delicate herbalness and light floral and saffron tones graced with some high citrus and white pepper notes.

Unlike some high-mountain oolongs, this is not an overly sweet or buttery oolong.  In second and later steepings, light peach flavors are added to the herbal-citrus-pepper profile.

An enchanting and refreshing tea, reminiscent of misty fir forests of Shan Lin Xi itself.

BREWING

Recommended Vessels: Glass, glazed porcelain pots or gaiwans. Gongfu style brewing is highly desirable.

Brew temperature: 195°

Brew Time:  45 seconds to 2 minutes

We recommend traditional gongfu steeping for this exquisite pick.
